This may be a stupid question… but where do I find the playlists they have on the demo iPhones at the Apple Store?

Honestly there really isn’t a way, you could search hard in the playlist section of Apple Music. I think they have a public playlist that plays the music you hear throughout the store but the only way to get that playlist, I think, will be to go back to the store and AirDrop it to yourself.
