There’s a pait of cookbooks called “well fed: paleo recipes for people who like to eat.” I’m not paleo, but the recipes are all fantastic. Better yet, in the beginning of one of the books there is a section on fast weekly food prep and how to use food during the week so it’s fast, nutritious, delicious, and never boring.
Basically you prep veggies, proteins, etc with little flavoring. You prep a few sauces and spice mixes. Then, during the week, you combine veggies and proteins with flavorings that suit your moods. It’s all quite quickly done in the evenings.
