How do you organise your Apple notes folders vs tags

I’ve recently started using Apple notes. I enjoy how quickly I can subcategorise things. However I’m finding it quite overwhelming at times because of the number of sub folders I may need to create. I also find that tags aren’t particularly helpful and I don’t know what to use tags for rather than putting into folders. I’m thinking of creating main category for example, personal family, money. I’m wondering how others use it for inspiration! Thanks
