About the Department:
The Culinary department is responsible for ensuring that the kitchen and stewarding operations of the Hotel run seamlessly.
Position Description:
Reporting to the Executive Chef, the Chef de Cuisine is in charge of coming up with creative South-East menus and is responsible for the supervision of the presentation of food and training and developing outlet teams on standard operating procedures. They are also in charge of recording production data
Essential Responsibilities:
• Develop and execute innovative Southeast Asian-inspired menus, showcasing the vibrant flavours and diverse ingredients of the region.
• Lead and supervise the kitchen team, ensuring smooth and efficient operations during service.
• Maintain a high level of food quality and consistency through active participation in the preparation and presentation of dishes.
• Manage inventory, including ordering ingredients, monitoring stock levels, and minimizing waste.
• Collaborate with the management team to develop strategies for revenue growth and cost control measures.
• Train and mentor junior kitchen staff, fostering a positive and supportive work environment.
• Ensure that all kitchen operations adhere to health and safety regulations and maintain high standards of cleanliness.
Required Qualifications and Experience:
• Culinary degree or certification preferred
• Minimum of 2
years experience as a Chef de Cuisine or similar role, with a proven track record in Asian-Pan Asian cuisine.
• Excellent knowledge of Asian culinary techniques, ingredients, and flavour profiles (Indonesia, Thailand, Vietnam, Malaysia, and any additional is a plus).
• Creative and innovative approach to menu development, showcasing a passion for Asian cuisine.
• Excellent communication and interpersonal skills.
• Strong organizational and time-management abilities.
