If you bring in your own wine and pay the corkage fee at a restaurant, what is the carding policy?

Depends on the laws of the state/province. Where I live, they can’t allow underage people to consume alcohol on the restaurant premises, regardless of who brings it or pays for it. So card people to find out their age, regardless of this particular situation.
